Fresh Spinach Fruit Salad

Ingredients
Salad
- 1-1 lb bag washed fresh spinach
- 1 cup strawberries, washed and sliced
- 1 cup seedless grapes (I slice large grapes in half)
- 1 large can pineapple chunks, drained, juice saved for another recipe
- 1 large can mandarin oranges, drained, juice saved for another recipe
- 1 cup blueberries, washed
- 1 cup coarsely chopped pecans or walnuts
- OPTIONAL but of course, delicious - ¼ cup bacon crumbles! If I’ve already cooked and saved bacon I will just tear it into small pieces and add to salad before serving, if not, it’s still DELICIOUS without it
- Dressing
- ⅓ cup red wine vinegar
- ½ cup sugar
- ½ tsp salt
- 1 tsp. Worcestershire sauce
- 1 medium onion chopped fine, or 1 tbsp dehydrated onion
Instructions
- Toss together spinach and fruit in large bowl. Add nuts and bacon if desired right before serving.
- Dressing: Mix all ingredients with whisk, and leave at room temperature to dissolve sugar. Add to salad and toss just before serving.
