Fresh Spinach Fruit Salad

Fresh Spinach Fruit Salad

Ingredients
Salad
  • 1-1 lb bag washed fresh spinach
  • 1 cup strawberries, washed and sliced
  • 1 cup seedless grapes (I slice large grapes in half)
  • 1 large can pineapple chunks, drained, juice saved for another recipe
  • 1 large can mandarin oranges, drained, juice saved for another recipe
  • 1 cup blueberries, washed
  • 1 cup coarsely chopped pecans or walnuts
  • OPTIONAL but of course, delicious - ¼ cup bacon crumbles! If I’ve already cooked and saved bacon I will just tear it into small pieces and add to salad before serving, if not, it’s still DELICIOUS without it
  • Dressing
  • ⅓ cup red wine vinegar
  • ½ cup sugar
  • ½ tsp salt
  • 1 tsp. Worcestershire sauce
  • 1 medium onion chopped fine, or 1 tbsp dehydrated onion
Instructions
  1. Toss together spinach and fruit in large bowl. Add nuts and bacon if desired right before serving.
  2. Dressing: Mix all ingredients with whisk, and leave at room temperature to dissolve sugar. Add to salad and toss just before serving.
