Mmmmm can you smell these sweet and sour meatballs?! Delicioso!
Cuisine: Asian
Serves: 30
Ingredients
Meatballs
  • 1 pound ground beef or ground turkey
  • ½ cup bread crumbs, plain or seasoned
  • ¼ cup milk
  • 1 egg
  • 3 tbsp. onion, fresh or equivalent dehydrated
  • 1 tsp. parsley
  • 1 tsp. salt
  • ½ tsp. Worcestershire sauce
  • ⅛ tsp. pepper
Mix above ingredients together and form into ¾ inch balls. Bake on foil lined cookie sheet (makes clean up easiest!) in a 400 degree oven for 12 minutes, then add to sauce.
Sweet and Sour Sauce
To 1 tablespoon of oil add 1 cup pineapple juice from 1 can pineapple chunks, in saucepan on medium heat. If juice doesn't equal 1 cup, add enough water to juice until 1 cup. Save pineapple chunks to be added later.
Next, add this mixture to saucepan with oil/pineapple juice:
  • 3 tbsps. cornstarch
  • 1 tbsp. soy sauce (I use low-sodium soy sauce)
  • 3 tbsps. vinegar
  • 6 tbsps. water
  • ½ cup sugar (Splenda also works well!)
Cook over low heat until thickened.
To thickened sauce add the meatballs and pineapple chunks, and a DASH of red food coloring (gives meatballs and sauce a "rich" color), mix well.
I put everything into my Crock-pot to keep temperature-ready for my guests! Delicious served "as-is" or over rice.
